There are two major mixing or make-up methods--the creaming method and the muffin method. (The muffin method is not just for muffins.) You're probably familiar with the creaming method but less so with the muffin method.
Some recipes work better with one method than the other. You can switch a recipe from one to the other to see which works better. The muffin method tends to make more tender baked goods. Creaming entrains air and tends to make taller cakes and muffins.
