3 Tasty Recipes Hidden in Our Archives
We pulled three tasty recipes from The Old Farmer’s Almanac EXTRA! archives because we think you’ll love them. But also because we like to say “ratatouille.”

Extra! Extra! Read all about it! 

This ubiquitous line from a newsboy set the stage for drama in so many cinema classics, but it hearkens to the days when newspapers had breaking stories that just couldn’t wait. The “extra” would supplement the daily edition with some of the biggest events in American history: the beginnings and ends of wars, presidential elections, stock market crashes, and even sports filled the extra editions of papers across the country. 

Unlike newspapers, which get published daily, The Old Farmer’s Almanac is published only once per year. And the fact is, we have more gardening tips, recipes, sunspot observations, weather updates, and amusing stories than will comfortably fit in one Almanac. It would be like trying to fit an entire oak tree into your pot-bellied stove. 

So we did what any enterprising 228-year-old publication would do. We took a nap. But when we woke up, we knew the only thing that we could do was to publish a monthly, digital magazine … the Almanac of the future … The Old Farmer’s Almanac EXTRA!

Ratatouille-Poached Eggs
As you can imagine, in over two centuries of publishing, we’ve collected quite a few recipes. Some remain, deservedly, lost to history. (Fish custard, anyone?) Others, however, deserve their day in the oven—particularly, we love how easy, nutritious, and delicious some egg recipes are. This one makes a lovely dinner on a cold or rainy night. 

Start by heating a few (it’s 4) tablespoons of olive oil in a large skillet, then add a chopped onion. Once the onion is soft, add in 2 cups of peeled, diced eggplant and one diced zucchini. Cook for another 3 to 4 minutes, then add two cloves of garlic, minced, and ½ teaspoon of paprika. Add in 2 cups of diced plum tomatoes, bring to a simmer, and add salt, black pepper, and balsamic vinegar to taste. Simmer for 7 to 8 minutes—just long enough for the irresistible aroma to fill your home!

Using the back of a large spoon, make four depressions in the ratatouille and drop 2 teaspoons of pesto into each. Crack an egg for each of the depressions, pouring a yolk and white into each, cover your skillet, and cook until the eggs are done. Garnish with parsley and olives and enjoy!
Herb Butter
Moving from chickens to cows, this recipe makes butter better. Butter is, of course, the ultimate condiment. It works on toast, biscuits, corn on the cob, green beans, carrots, and even steak. As for herbs? We can’t really imagine cooking without them. What would a pasta sauce be without basil? So what’s better than this zesty herb butter? Try it out, and we bet that you’ll have a hard time coming up with an answer. 

Begin by beating 1 pound of softened butter until it’s fluffy. Then add chopped garlic, chopped shallots, 1.6 ounces (½ tube) of anchovy paste, and freshly chopped parsley, basil, and thyme. Mix together with a bit of Worcestershire sauce, and ½ teaspoon each of paprika and black pepper. 

Form the butter into a log on aluminum foil. Roll the foil, twisting the ends, and then freeze and slice as needed. We recommend letting it melt into your grits for a little breakfast zing. Yum!
Spicy Glazed Meatballs
Speaking of breakfast, we do love a bowl of oatmeal on a quiet morning, but oatmeal isn’t just for breakfast. And meatballs aren’t just for dinner. Or maybe they are? What if they’re made with oatmeal? This meatball recipe is a winner of our annual Reader Recipe Contest, which always brings in some of our favorites. 

To make this recipe, preheat your oven to 400 degrees, then mix together 1 pound of lean ground beef, ½ cup old-fashioned rolled oats, ½ teaspoon each of seasoned salt and black pepper, 2 tablespoons of minced onion, 2 teaspoons of Worcestershire sauce, and ¼ cup of milk. Shape the mixture into 1-inch balls. 

Cook the meatballs in a large nonstick skillet over medium heat for 10 to 15 minutes, turning occasionally to brown on all sides. Drain and place them in a single layer in a 13x9-inch baking dish. 

For the glaze, purée 1 cup of raspberry jam with 1 tablespoon of white vinegar in a blender or food processor. Place the mixture in a microwave-safe bowl, along with 1/3 cup of yellow mustard. Stir to blend and microwave on high for 2 to 3 minutes. Spoon the mixture over the meatballs and bake for 15 minutes.
