Cold Roast Salmon With Smashed Green Bean Salad

Whether you’re keeping your 4th of July celebration big or small, consider this for your holiday weekend: a whole side of salmon that’s intentionally roasted the day before you plan to eat it. Having the main ready to go means minimal fuss when you’re ready to pull the meal together.

And if your group is very small, go ahead and make the dish anyway. Eat a bit of the lemony roasted fish warm for dinner, then stash the rest in your fridge for a couple of days of spooning cold over grain bowls, toasts, and flaking into salmon burgers.
