Steam canners can be used as a substitute for a water bath canner. They use only a few inches of water in the bottom of the pot rather than filling the pot up to completely submerge your jars. Read more about steam canning. Is Canning in a Pressure Cooker Safe? This article is for a standard stovetop pressure cooker. The first thing to note is I have nothing against pressure cookers! I want to focus on something new that Iβve seen in canning groups that Iβm concerned about. They call it βdry canning,β but thatβs where theyβre actually preserving foods that you would generally process in a pressure canner. Usually, youβd add liquid.
