Beef Stir-Fry with Noodles |

(Double or Triple the recipe if desired) |
Ingredients: |
1 tsp canola oil |
3 ounces lean stir-fry beef strips |
½ red pepper, cut into strips |
1 cup broccoli florets |
1 cup prepared soba noodles |

Sauce: |
1 clove garlic, minced |
1 tsp grated ginger |
1 tsp honey |
1 tsp Sriracha |
2 tsp sesame oil |
1 Tbsp white wine vinegar |
2 Tbsp low-sodium soy sauce |

Directions: |
1. In a large skillet heat the oil over medium-high heat. Cook the beef strips, along with the peppers and broccoli until the beef is cooked, about 4 minutes. Add the noodles and mix well. Turn off the heat. |
2. In a small bowl combine the sauce ingredients. Pour half of the dressing ingredients over the stir-fry. Refrigerate the remaining sauce in an airtight container. |
