Back-to-school season is a great time to dig into new cookbooks—tons of titles are released every fall. I’m still catching up from summer, though, cooking my way through Chetna Makan’s 30-Minute Indian, which is packed full of excellent weeknight dinner ideas. Tonight, we’re making her vibrant green dahi dal, swirled with yogurt and topped with crispy onions. Make a big pot of rice, too, and you’ll be ahead for tomorrow, when we’ll transform the rice into comforting cháo, or garlicky sinangag, or maybe cooling Green Rice with Tomatoes, Eggs, and Almonds.

Sunday, it’s time for a big pot of chili (from Queer Eye’s Antoni Porowski and Epi contributor Mindy Fox, whose latest book comes out next week). I plan to double the recipe—so next week can be a little easier, too.
