I’m still catching up from summer, though, cooking my way through Chetna Makan’s 30-Minute Indian, which is packed full of excellent weeknight dinner ideas. Tonight, we’re making her vibrant green dahi dal, swirled with yogurt and topped with crispy onions. Make a big pot of rice, too, and you’ll be ahead for tomorrow, when we’ll transform the rice into comforting cháo, or garlicky sinangag, or maybe cooling Green Rice with Tomatoes, Eggs, and Almonds.
