“I take inspiration for my desserts from everything within my life, from nature, music, architecture, people, memories, experiences, feelings and emotions, as they all have some influence in my work. Working with some world class chefs and following pioneers/trend setters in the professional pastry industry pushes creativity and motivates me to produce desserts to please the palate, while using locally produced ingredients. We design our desserts around seasonality and visual creativity. We keep the dishes modern with a strong element of technique. Traditional standards are respected, however I like to put a modern twist to fit in with current times."
