A close friend of mine is a Pastry Chef, as well as an instructor at the New England Culinary Institute. When she tells me that a place has "the best pastries," I listen intently ... The Barista makes a couple cappuccinos with glorious respect for the crema ...We dive into a perfectly executed kouign aman, Cheese Danish, Almond Croissant, raspberry tart, and an apple galette. At this point, I've taken a few more sips of my coffee, and begin to realize just how special this coffee is. Extracted quickly, but with care. So Vermont. Much Enjoyment.
