Canned pumpkin is handy.  We're partial to fresh pumpkin.  

Here's what you have to do to use fresh pumpkin in your recipes. 


The Perfect Frosting

This is the best cream cheese frosting that we've found.  It's a whipped cream frosting stabilized with cream cheese.  

Lite Whipped Cream Frosting

1 four ounces of cream cheese (1/2 of an eight-ounce block), softened
1/2 cup granulated sugar
1/2 cup powdered sugar 
pinch of salt
1 tablespoon meringue powder
1 cup heavy whipping cream
Preheat the oven to 325 degrees.

Cream the granulated sugar with the cream cheese. Add the other ingredients and beat until light and fluffy.
