Consider freezing broth in an ice cube tray. Each section holds about 2 tablespoons. Once broth is frozen, transfer cubes to a freezer bag. This makes it easy to measure out the amount you need for a recipe! Canned Pumpkin Shortage Ahead...Use Fresh instead! Pumpkins made the news headlines recently because of a predicted shortage of pumpkins this fall. Crop experts have indicated that pumpkin yields are down by about 30% due to poor weather conditions. Canned pumpkin manufacturer Libby says those lower yields will result in a short consumer supply of canned solid pack pumpkin and pumpkin pie filling throughout the holiday season. This is a great opportunity to learn how to use fresh pumpkins in baking or soups. Check out Gretchen's latest article on preparing fresh pumpkins. Remember, pumpkins are vegetables just like other types of winter squash, so they are pretty versatile for other things besides pumpkin pie. Trick or Treat! If you find yourself digging into the Halloween candy before the trick or treaters arrive or afterward with leftovers, here are three strategies that you can try to avoid it! Don’t purchase Halloween candy until you actually need it on for your trick or treaters. If it’s not there, you won’t eat it! Buy only the amount of Halloween candy that you think you will need. It’s better to buy a little less and run out of candy rather than have the leftovers. The perfect solution if you run out of candy is to get a roll of quarters and hand each latecomer a quarter instead. Buy treats for your Halloween visitors, not yourself! Refrain from selecting things that you really like. Buy something for the trick-or-treaters that you have no particular interest in.
