It’s very important to understand that though your grandmother may have water bath canned her green beans, it is not a good idea. I have gotten this question several times and have covered the reasons why it’s not safe. Now a few of you won't agree with this recommendation. Please don't e-mail me and tell my why you think it is fine. We all make our own decisions in our own kitchens. I suggest putting that pressure canner to good use!

Freezing Green Beans

You can also freeze green beans and even dehydrate them to be used later in the winter time. Note that when freezing you need to blanch them first. Blanching instructions are included.
