When I have a full kitchen available for canning again, I'm sure things will look a little different, since different things grow well in TN that didn't grow well in CO (and vice versa).

Back in Colorado, for example, I canned a LOT of apricots. Super easy, and no peeling required, plus we had quite a good harvest every few years.
