Easter Egg Recipes

Is it too late to order non-dairy and vegan Easter candy for the kids' baskets this year? No problem. You can make amazing chocolate Easter Eggs and other desserts at home. Below are just a few we wanted to share:

Vegan Breakfast Quiche

Our quiche works well in an Easter weekend brunch. We suggest serving with sides of fresh fruit.

Yields: 6 to 8 servings
 
Ingredients:
1½ pounds soft tofu, well drained
1½ pounds firm tofu, well drained
1 cup arrowroot or cornstarch
2 cups water
3 tablespoons nutritional yeast
1 tablespoon salt
½ teaspoon pepper
1 teaspoon ground ginger
1 teaspoon onion powder
½ teaspoon nutmeg
½ teaspoon dry mustard
3 tablespoons sesame oil
 
Directions:
  1. Preheat oven to 350°F.
  2. Place all ingredients into a blender or food processor and blend until smooth.
  3. Add spices and adjust to your taste.
  4. Pour the mixture into an 8-inch springform page or 9-inch pie pan and bake 40 to 45 minutes until it springs back when lightly touched.
 
Variations: Add any of the following to the mixture. Add spices and oils to the mixture while in your blender but gently stir in chunky ingredients by hand.
  • Sautéed chopped spinach, red bell pepper, and onions to the mixture
  • Bell peppers, onions, Mexican spices, and cilantro
  • Bean sprouts, green onions, sesame oil
  • Onion and dill
