Arabella Breck just wrote a great article about how Coronavirus is affecting Chicago's vegan scene. She interviewed a lot of us so it's a good overview of everyone from newer restaurants like Upton's Breakroom and older places like ours. If you have a choice and the means, please consider supporting our local places whenever possible. Some of us are hoping gift card sales pick up while others are relying solely on delivery and carryout. Take a read through her article and please share it on your own social media.

Another article, this one from Eater, focuses on the farmers and food service companies that supply restaurants. (Trigger warning—not a vegan article.) This economic downturn has caused many cancelations or change-orders. And some of these companies have started setting up to sell direct to the public. For example, locally owned Chicago Vegan Foods is now offering their restaurant-sized bags of Dandie's marshmallows for direct purchase via their website. "We're trying to be in the business of boosting morale," as stated on their Facebook page. If you've ever had our own Chicago Diner S'mores Brownie Sundae with Dandie's marshmallows, you know what a morale boosting treat they are. Unfortunately, we can't delivery ice cream desserts at this time but we can recommend that you check out buying your own restaurant-sized bag of marshmallows as a treat for the kids.

And don't forget the farmers left in the lurch by closure of some farmer's markets. Many are starting to pivot to CSA models but they lack the years of preparation and audience building. Please check your favorite markets' and vendors' websites for information on how you can continue to buy fresh produce directly from your favorite sources.

And please spread the love by promoting and sharing small business links on your own social media. Every little bit helps.

Let’s make today a happy treat day.

A great treat from our current cookbook, these molasses- and ginger-spiced cookies are perfect for late winter treats. Rolling and pressing them is also a great kid-friendly activity after they’ve completed their homework.

Molasses Sugar Cookies

Yield: 2 dozen cookies
 
Ingredients:
¾ cup melted vegan shortening (or margarine)
1 cup + 2 tablespoons granulated sugar, divided
¼ cup molasses
¼ cup soy milk
2¼ cups whole wheat flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ teaspoon ground ginger
½ teaspoon salt
 
Directions:
  1. Allow the shortening to cool to room temperature and place it in a medium mixing bowl. Add the 1 cup of sugar, molasses, and soy milk, then beat well with a whisk.
  2. In a large mixing bowl, soft together the flour, baking soda, cinnamon, cloves, ginger, and salt.
  3. Pour the wet ingredients into the dry ingredients, mixing well. Refrigerate for 1 to 4 hours.
  4. Preheat oven to 375°F. Line 2 baking sheets with parchment paper.
  5. Let the dough sit on the counter for 15 minutes to soften a bit. On a clean, lightly floured work surface, form the dough into 1-inch balls using a small ice cream scoop and flatten them slightly with your palms. Place the dough balls on the prepared baking sheets and sprinkle them with the remaining sugar.
  6. Bake for 8 to 10 minutes. Remove from the oven and place on a wire rack to cool. Serve.

Variation: Don’t have molasses? To make Sugar Cookies instead, omit the molasses, cloves, and ginger and add 1½ teaspoons vanilla extract and 1½ teaspoons orange zest to the wet ingredient mixture.
