During lunch at the French Quarter restaurant Sylvain last week, the look and feel was familiar, and there were hand sanitizer and masks everywhere.

The restaurant was also trying out a new business model, as are other restaurants that are part of the LeBlanc + Smith group.

These restaurants are aiming to make this the new reality to running eateries: There are fewer workers, but they're paid a base salary. They even have health insurance.
