Fall is a wonderful time to prepare nurturing meals. Below, you will find a warming recipe for acorn squash and ideas for healthy side dishes. Centering Before Cooking • In fall the weather becomes cold, windy, and changeable. It’s time to keep the body warm and nurtured, as well as grounded, with nourishing warm meals. • Before cooking, take a few moments to center yourself.
• Start by taking a few slow, deep, warm breaths. Consciously relax away from all your duties and responsibilities into your inner haven of peace. Don’t allow the busyness of life to overwhelm you. Make an effort to cook with focused awareness, blessing the food along the way, so that it will bless and nourish those who eat it.
-1 acorn squash -Sunflower or sesame oil, or butter (to coat squash) -Seeds from 1 acorn squash, washed and cleaned of pulp -3 tablespoons Bragg’s Liquid Aminos -3 tablespoons sunflower or sesame oil
Instructions:
-Heat oven to 375°. Cover baking tray with parchment paper (optional). -Peel acorn squash and cut into halves. Clean seeds of pulp. Wash seeds and set aside in a small bowl. -Coat halves of acorn squash with sunflower or sesame oil, or butter, both inside and out. Place halves face down on tray. -Bake for about an hour, or until soft. Put timer on 50 minutes. Check to see if ready by piercing squash skin with a fork. The fork should insert easily. -Combine squash seeds with 3 tablespoons Bragg’s and 3 tablespoons sunflower or sesame oil. Spread in a single layer onto a cookie sheet, and bake for 10 to 15 minutes at 375°. Set aside to be used as garnish.
