How to Make the Best Chocolate Chippers
Start with a great mix or a great recipe. Then, use the best ingredients. The chocolate is critical; buy the best.
Use the right pan. For most recipes, use a dark nonstick pan. A silver pan reflects the heat and bakes too slowly. Don't over-grease the pan. It takes little or no grease. Wipe the pan down between batches.
Do not over bake. The cookies should look very moist, even under-baked. The bottoms of the cookies should be golden, not brown. Use a timer to get precisely the same bake time for each batch. Get them off the hot sheet immediately and onto a rack to stop the cookies from continuing to bake and dry out.
