This is going way back to the dawn of time. When my mother had leftover turkey, she made enchiladas. For a bunch of gringos, we sure liked them.
She always made white enchiladas, with a cream sauce, and baked them in the oven. But you can make them with a tomato base and you can use the microwave instead of the oven.
Over the years, we've accumulated several of these recipes. I'll let you sort through them and decide what you want to try.
