My friend Cy in Minnesota called the other day. He had given a French Miche Bread to his friend. "Within three hours, he called me," Cy reported. Cy's friend said, "My family went nuts over that bread."
Miche bread is a French bread. Instead of being all white flour, it has other ground grains. The crumb is open, moist, and amazingly light and airy--as light as a French bread, just more wholesome.
Cy made his bread on the dough setting and then baked it in a loaf pan. You can make yours in a bread machine with a push of the button.
