Five Helpful Tips for Fall Baking
(Includes how to peel potatoes in a flash!)
1. How to Bake Apples.  It's apple season!  A quick, easy dessert is a baked apple stuffed with brown sugar, nuts, and dates or raisins with maybe a little orange zest added.  To keep the apple from bursting, peel a 1/2-inch ring around the top of the apple with a veggie peeler. Scoop the core out with a melon baller or sturdy metal teaspoon about 2/3's of the way down.  Fill it with your goodies. 

2.  How to Accurately Measure Liquids.  First test your measuring cup for accuracy by placing it on a kitchen scale and filling it with water to the 1 cup mark.  It should weigh eight ounces.  Always set your cup on the counter and pour water into it to the desired mark.  Read the measure at eye level. 
 
3.  Don't spend time peeling potatoes. Use an apple peeler that peels, cores, and slices to peel your potatoes.  The peeler will remove the skins. If you engage the slicer, it will make the cutest curly fries in a flash. 

4. How to Make Your Own Baking Pan Coating.  Greasing your pan and then dusting it with flour is a pain.  Instead mix 1 cup shortening and 1/2 cup flour together.  Spread it in your pans with a pastry brush. Better yet, use parchment paper.

5. What to do with Those Over-Ripe Bananas.  Right now we have three bunches of bananas in the kitchen, at different degrees of ripeness.  We regularly peel them and stick them in a zipper-type bag in the freezer.  Some folks don't peel their bananas before freezing; we do.  Lots of great banana bread.
