Clams in White Bean Sauce

I love how easy it is to prep this one-pot dinner while you cook—no mise en place required here. Set the fennel to caramelize first, then start chopping the rest of your ingredients for the lemony sauce. There’s a hidden gem in this recipe, too: the trick of tossing canned white beans in salt and olive oil and letting them sit until you’re ready to add them to the pot. This extra step gives those canned cannellini beans all the richness and flavor of homemade beans. Feel free to use this move for other dinners, as well—adding white beans to dinner is always a good idea in my book.
