As we reach the later days of summer, cooking seems to be about doing as little as possible in the kitchen. So this week we are focusing on easy, satisfying, fun dishes.

Our contributing cook Elizabeth Hewson has two quirky dishes, perfectly in time for Australia Day, that can be prepared for groups or for outdoor dining or even to be eaten at the beach. Her garlic prawn burgers and salt-and-vinegar chips are fun, fuss-free dishes made for breezy days. They also taste fantastic - why order takeout when these dishes are quicker to make and taste just as good?

Paola Bacchia, meanwhile, provides three simple pasta recipes that offer satisfying eating without the hassle. Each of these dishes can be made in a matter of minutes and is full of flavour and nutrition. Her walnut pesto linguine is an interesting take on a traditional pine nut pesto, worth trying.
