You may remember Ruben Chavez, the guy behind the El Paso Mexican Grill locations in Lafayette and others in south Louisiana. He named popped up a few days ago after he was granted a demolition permit inside the former Hooters space at 3221 Ambassador Caffery Parkway. He gave me quick details of what he has planned there. It's a bit early (he'll likely need a building permit at some point), but it's accurate to say the space will not reopen as a Mexican restaurant. Read the full story here.
