Pannekoeken are driven by steam, not leavening. In a hot oven, the batter climbs up the sides of the pan creating a dramatic bowl. You don't have to have a specialty pan; a skillet with a good nonstick surface and rounded sides works.
We sell a 12-inch pannekoeken pan that makes a three-egg pannekoeken. One of my favorite pans is my eight-inch frying pan. It makes a perfect two-egg pannekoeken.
You can get a six-inch nonstick pan for free today. It makes cute little one-egg pannekoeken, perfect for a single meal.
The manufacturer probably didn't consider oven use, but the handle has been fine at 425 degrees. I think, but can't guarantee, that the handle will hold up to continued oven use.
