Plus: Catch up on the final episode of Patient Zero
| 'Everybody wants to eat well' | If you've ever thought that ramen restaurants are popping up everywhere, or that pork buns have become as ubiquitous as smashed avocado, it might be the influence of American chef David Chang. Way before it was cool, he started the Momofuku Noodle Bar in New York. It's since grown into an empire spanning 15 restaurants from Los Angeles to Sydney. But as he tells Jonathan Green in this week's Blueprint, anything you might care about in food is ephemeral. "You don't eat awards, you don't eat nostalgia; everything you work for in this business gets flushed down the toilet eight to 10 hours later," he says. "It is literally one of the dumbest professions in the world, which is why I love it so much." And if you haven't heard it yet, make sure you catch up on the last episode of our special four-part series on disease outbreaks, Patient Zero. Olivia Willis traces what happened when we faced those first coronavirus cases: in Melbourne and Munich, in Lombardy and Wuhan. It's about where things went well, where they didn't — and whether there's anything we could have done to stop it. Until next time, Rosie Ryan, digital editor Enjoy getting Radio National in your inbox? Forward to a friend so they can too! | |
