From the McDougall Kitchen: Kale

This cruciferous vegetable is packed with vitamins and minerals like vitamins A, C and K that aid with bone health and disease prevention along with potassium, calcium and zinc. Available in a wide variety of textures and colors, kale can be grown year-round in most climates in the ground or in a pot. Kale is a great addition to the many different soups we’re making this season. Potato and Kale Soup and Yammy Kale don’t require a lot of cooking time which makes them great options when you’re in a hurry or you don’t want to spend a lot of time in the kitchen. Both BBK Soup and Lentil Soup are hearty and filling especially when served over whole grains or with whole grain bread. When you’re craving something with crunch, make a batch of Baked Kale Chips for a guilt-free snack.
