Quick and light meals hit the spot when it’s hot outside. Luckily, there are so many fresh ingredients available this time of year, putting together a meal that is flavorful and light can happen in 10-30 minutes. These recipes require little to no cooking, and many of them can be prepared ahead of time for an easy lunch or dinner.
