Love your heart!In many parts of the country, snow and cold weather are synonymous with the month of February. Other images that may come to mind this time of year are the red hearts often connected with Valentine’s Day and the celebration of Heart Health month. On the subject of heart health, did you know that the American Heart Association recommends that folks consume three or more servings of whole grains daily?

Due to our nation’s long history and relationship with foods containing wheat as a main ingredient (as well as barley and rye), it’s easy for the mind to automatically associate “gluten” with “whole grains”. However, it’s important to remember that there are many whole grains that are gluten-free, such as whole grain corn, oats, brown rice, millet, quinoa and more!

From Glutenfreeda’s Instant Oatmeal to our Granola and from our Artisan Flatbreads to our Pocket Sandwiches, so many of our offerings contain ample amounts of whole grains and quite a few also include the Whole Grains Council stamp on the package to indicate how many whole grains each product contains per serving.

Gluten-free Recipe

Glutenfreeda Granola Bread

Moist and hearty, this month’s recipe featuring Glutenfreeda Granola is perfect for surprising a sweetheart at breakfast or for a Valentine’s Brunch!

Ingredients:

  • 1 1/2 cups Glutenfreeda Granola, any flavor (we used Cranberry Cashew)
  • 1 1/2 cups all-purpose gluten-free flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup brown sugar, packed
  • 1 1/2 cups of fresh grated carrot
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup buttermilk

Directions:
Combine gluten-free flour, baking powder and salt in a small bowl and set aside. In a large bowl mix eggs, vegetable oil and buttermilk until combined. Add Glutenfreeda Granola, brown sugar and grated carrot to wet ingredients. Mix well and fold in flour mixture. Fill greased and floured bread pan and bake in 350 degree oven for 55-60 minutes. Cool completely on rack before frosting.

Glutenfreeda Cream Cheese Frosting

Ingredients:

  • 1/4 cup Glutenfreeda Granola, any flavor
  • 4 oz. cream cheese
  • 4 Tbsp. softened butter
  • 1 cup of powdered sugar

Directions:
Beat cream cheese, butter and powdered sugar until well mixed and slightly fluffy. Spread on top of Glutenfreeda Granola bread and sprinkle evenly with ¼ cup of granola.
