When one hears the word “Thanksgiving”, the images that may come to mind are those of long tables covered in elegant linens, dotted with fine china and lined with smiling guests eagerly anticipating the bountiful fare before them, including (of course) a plump turkey on a platter. I’ll admit that I’m not the biggest fan of roast turkey and if I had my druthers I’d choose a more unconventional and creative menu; but alas, my husband and two kids love the traditional Thanksgiving meal with all the trimmings, so I oblige and cook-up the feast each year.

GlutenfreedaHowever, even a regular Thanksgiving meal is a bit more unique when you need to ensure that everything served is gluten-free. It’s actually relatively easy to make bread crumbs for the stuffing by toasting and crumbling gluten-free bread. The added benefit is that it tastes fresher and you can put in your own blend of herbs and spices. Also, corn starch or super-fine brown rice flour in lieu of wheat flour ensures a safe, smooth roux for the gravy. Finally, who can forget the best part of all….dessert! Below, you’ll find a gluten-free pie crust recipe made with Glutenfreeda Instant Oats which is a nice base for many pies.

This gluten-free pie crust made with Glutenfreeda Quick Rolled Oats will likely be the easiest one you’ll ever make!

Oatmeal Pie Crust

Ingredients:

Directions:

Preheat oven to 350 F. Combine in order given and mix well. Press into lightly greased 9 inch pie plate. Bake for 15-20 minutes. Cool completely before filling.

Pumpkin Cheesecake Pie

Ingredients:

  • 16 oz. cream cheese
  • 3/4 cup sugar
  • 15 oz. pure pumpkin
  • 1 1/2 tsp. cinnamon
  • 1/2tsp. nutmeg
  • 1/4 tsp. ginger
  • 1/4 tsp. ground cloves
  • 1/2 tsp. vanilla extract

Directions:

Using electric mixer, combine cream cheese and sugar until smooth. Add pumpkin, spices and vanilla; mix well. Spread into Glutenfreeda Oatmeal Pie Crust and chill in refrigerator for at least 5 hours. When pie is set, top with Maple Pecan Glaze.

Holiday Baking Tip: Toasting pecans is easy – Spread pecans on lightly greased sheet and bake at 350 F for 5-7 minutes or until aromatic and lightly browned.
Maple Pecan Glaze: Boil 1 cup of whipping cream and 3/4 cup of pure maple syrup for 15-20 minutes stirring occasionally. Mix in 1/2 cup of pecans and cool completely. Use as a topping for pie.
