Dogs must be really happy right now.

Well, it’s Friday and we made it through another week of social distancing while walking the dog 6 times a day. Kudos to everyone!

While on the topic of furbabies, the Humane Society has created a very thorough page addressing many questions people have concerning pets and Coronavirus. Topics include helping shelters and rescues, creating a preparedness plan for your pet, keeping animals safe, and also a list of links to additional info.

Lemon Poppy Seed Muffins

From our first cookbook (long out of print) comes this moist treat to start your day. Serve with a side of fruit for brunch or breakfast. Let’s start the weekend already!

Yield: 10–12 servings
 
Ingredients:
1 cup whole wheat pastry flour
1 cup unbleached flour
1/3 cup sugar, we use turbinado
2 teaspoons baking powder
½ teaspoon baking soda
1½ teaspoons poppy seeds
¼ teaspoon salt
 
1 cup soy milk
4 teaspoons oil
¼ teaspoon grated lemon zest
1 teaspoon lemon juice
 
Directions:
  1. Preheat the oven to 375°F.
  2. Lightly oil the muffin pans.
  3. Mix the dry ingredients in a medium bowl.
  4. Add the soy milk, oil, lemon zest, and lemon juice. Stir until moist.
  5. Spoon the batter into the muffin pans. Bake for 25 to 30 minutes.

Variation: Gently fold in 1 cup fresh berries or chopped fruit to the batter.
