  2. Make certain that the egg mixture has soaked through the bread and cook over a medium high heat. But don’t let the bread soak for so long that it falls apart when you try to move it.
  3. Super airy bread tends to fall apart. Choose bread with structure. Day-old bread works great.
  4. Use a whisk and beat the eggs well. The yolks and the whites should be well mixed.
  5. Cooking with butter rather than oil lends flavor to your French toast. Wipe out any browned butter with a paper towel between batches.
