How to make ice cream cupcakes--in three easy steps!
Those are scoops of ice cream hiding under the chocolate. And the homemade chocolate coating is incredible too. And those chocolate cupcakes underneath are pretty darned good. In total, they're "blow-your-mind" good.
Here's how you do it.
- Make cupcakes with our Fudgy Baby Cakes Mix. It's a cream cake so it's denser and moister than store mixes and the cupcakes have more substance so they hold together better. Besides, they're filled with little chocolate pieces.
- Start with maybe a dozen cupcakes. Place a large scoop of ice cream on each. The ice cream will melt a little on the cupcakes, so hurry them to the freezer where they will freeze hard with the ice cream glued to the top of the cupcakes.
- Make the chocolate coating. It should be warm enough for dipping. Invert the cupcakes in the chocolate and put them back in the freezer until you are ready to serve them.
Save any leftover chocolate for chocolate covered strawberries.
