The key to great cookies is attention to detail--doing the same thing batch after batch.
We use a scoop to make the same size and shape of cookies. We put the same number of cookies on each sheet.
There are oven thermometers in the ovens. If the oven is off-temperature, the cookies don't go in. Cookies are baked precisely. (The raspberry cookies above are baked to 8 minutes and 40 seconds in our ovens.)
