How to Make Perfect Cookies Every Time!

The key to great cookies is attention to detail--doing the same thing batch after batch.

We use a scoop to make the same size and shape of cookies. We put the same number of cookies on each sheet.

There are oven thermometers in the ovens. If the oven is off-temperature, the cookies don't go in. Cookies are baked precisely. (The raspberry cookies above are baked to 8 minutes and 40 seconds in our ovens.)

Cookie Tip #1 The Right Pan Prep

Don't put too much shortening on your pan. Too much grease on the pan and the cookies spread more. Wipe the pan between batches. Better yet, use parchment paper or a baking mat.

Cookie Tip #2 The Right Oven Temperature

Cookies spread more at a lower temperature. They spread until the heat sets the cookies. Use an oven thermometer to see if the oven is really 350 degrees.

Cookie Tip #3 Cold Dough

Cold dough acts differently than warm dough. Don't let the butter in your dough melt. Start with hard butter and refrigerate your dough between batches.
