Our daughter, Debbie, came up with this concoction.
A pancake house in Idaho Falls was advertising stuffed pancakes. When she got there, it was only a pastry filling layered between two pancakes.
She thought, "I can do more than that."
When she got back to the test kitchen, she started tinkering. I'll be darned--she found a way to cook a filling inside the pancakes.
Mostly, she used fresh fruit but it worked well with a pastry filling.
So pick your favorite pancakes, match them with fruit or a filling, and go to town. (I like peaches, berries, or bananas.) Then top them with the right syrup. (Those peach and banana stuffed pancakes at the top are wonderful with coconut syrup.)
