All whipping cream is not the same! And if you are using whipping cream for frosting or whipped cream, that's important.
Whipping cream has at least 30% butter fat. Heavy cream has 36%. Extra heavy whipping cream has 40% or more. From whipping cream to extra heavy, that's a third more.
If you are making whipped cream frosting, use extra heavy whipping cream; the frosting will hold up much nicer. Even for whipped cream, we prefer extra heavy.
Not every store will carry extra heavy. We get ours at Sam's Club. The nutrition panel lists six grams of fat per a one tablespoon serving.
Keep meringue powder on hand. It will make your whipped cream and frosting hold up much better. Usually a tablespoon or two will do it.
