| | | | In 2020 and 2021, there was something I like to call the βgreat canning lid shortageβ. So many people were trying to preserve their own food while factories and distributors were running at reduced capacity as well. Stock ran low from trusted suppliers and, to make things worse, low-quality knock-off brands entered the market in a scramble, trying to take advantage of the situation. (Thatβs why some folks also turned to reusable canning jar lids like these.) As you know, canning jar lids are really that important for home canning. How do they work? As the food in the jar is being processed, oxygen will be pushed out of the jar. The sealing compound in the lid warms and softens, fitting itself tightly against the jar. As the food cools, the contents shrink and the lid will be sucked down and form a tight seal protecting the food from any further contamination.
