One of my favorite parts about living in LA was the access to great Korean food pretty much whenever I wanted. My favorite dish, to be honest, was the BBQ short ribs. Those kalbi short ribs marinated in the sweet gingery sauce and charred to perfection were mouthwatering. Plus, they were often served alongside pungent kimchi and fluffy, white rice making them impossible to resist. I never ordered anything else. That was enough.
Fast forward a couple decades, and here I have the opportunity to make my own Korean Style BBQ Sauce. Now, this isn't a typical Korean sauce. Instead of soy, it uses a mix of coconut aminos and tomato paste to provide umami. Instead of sugar, I added pear juice and grape must, along with onion puree (which gets even sweeter when cooked).
The result is a unique, antioxidant-rich Korean Style BBQ Sauce that isn't as cloyingly sweet as some of the others out there.
A simple way to use this Korean Style BBQ Sauce is as a marinade for meat, particularly fattier cuts like short ribs. If you want to get creative, you can use it as a simmer sauce, adding it to ground beef, pork, or a veggie stir fry as it cooks in the pan. It can even be a dipping sauce after your meat has cooked.
