THE PROCESS
The Cunard team approached us back in 2023. They wanted to create a unique dry vermouth to commemorate the launch of their incredible new ship, Queen Anne. They had commissioned a Queen Anne gin and wanted an exclusive dry vermouth to make their ultimate signature martinis.
They had a clear brief and wanted their signature martini to be a showcase of the very best aromatics and botanicals from around the British maritime coast. So we were tasked with trying to create a suitable vermouth, to make a uniquely British martini!
THE BOTANICALS
It took us around 5 months and numerous blends to get the profile right. It was important to keep the vermouth crisp and dry, but also to layer up some salinity and minerality too, to building complex layers of flavour that would work harmoniously with the gin. Finally, we settled on a blend of British botanicals (with a touch of global fragrance too) to build up the primary and secondary aromatic layers;
Primary: Lemon peel, peppermint, dulse seaweed, rosemary, thyme, rose petal
Secondary: Gentian, savory, wormwood, milk thistle, clove, yarrow, sage, hyssop.
