One of the best things about canning is that you have multiple ways to preserve the same food and mix things up - you can make applesauce, apple butter, and apple pie filling; plain beets and pickled beets; and so much more.

Why pickles in particular?

Well, pickles contain vinegar, making them a high-acid food that's safe to process in a water bath canner. Pickle recipes are perfect for new canners or people who don't have a pressure canner yet.
