Dr. McDougall explains that our blood sugar rising after eating is a natural process that occurs to provide energy to the body. Complex carbohydrates, or sugar, is essential for certain organs such as the kidneys to function properly, and the body and brain prefer sugar as their primary source of fuel. Type 2 diabetics are often advised by conventional physicians to avoid starches in order to control their blood sugar levels.
