Activity ideas for kids, or the kid in all of us.

Are the kids bored yet? Are you bored yet? FaceTime play dates are awesome for keeping kids connected while we’re all safe at home but you might need a few more options. Museums have increased their virtual offerings to help frazzled parents keep kids engaged. And while the kids are busy, you can make our recipe of the day, Yellow Lemon Cake (scroll for recipe).

Lemons

Lemon Yellow Cake

From our original cookbook (that is unfortunately out of print), this cake is lovely with maple or vanilla icing.

Yield: 8 servings
 
Dry ingredients:
2 cups unbleached flour
2 cups whole wheat pastry flour
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
 
Wet ingredients:
½ cup lemon juice
¾ cup oil
¾ cup soymilk
1¾ cups maple syrup
1 teaspoon lemon extract
zest of ½ lemon
2 teaspoons white vinegar
 
Directions:
  1. Preheat oven to 350°F.
  2. Mix the dry ingredients in a medium bowl.
  3. Mix the wet ingredients in another medium bowl.
  4. Combine the wet ingredients with the dry ingredients. Mix until smooth.
  5. Pour into an oiled 8- or 9-inch round pan.
  6. Bake 1 hour or until a toothpick inserted in the center comes out clean.
  7. Cool completely.
Baker’s Note: Lemon extract is made from the yellow rind of lemons. If you don’t have lemon extract, add an additional 2 teaspoons of lemon zest.
