On Christmas Day a blizzard hit us. We quickly had two-foot drifts. Roads closed. It was Christmas morning and church was canceled. The county sent out a message to stay home, that except in an emergency they would not be sending out snow plows.
It was a warm, cozy day at home, great weather for comfort food. For me, meatloaf is a comfort food. I find little individual meatloaves a delight. The meatloaf above is a cheeseburger meatloaf. The meatloaf to the right is a taco meatloaf made with taco seasoning, olives, sour cream, and cilantro.
How to Make Lower Fat Meatloaves In the past, I've been concerned about the fat in meatloaves. For years we tipped our meatloaves up while they were still hot and poured the fat out of the pan.
Then we discovered lean meatloaf pans. These are pans within a pan with perforated inner pans so the fat drains as they cook. Love these pans! It's amazing how much more fat drains out of the meat.
