1. Jumbo Muffins. Make them like regular muffins but they'll take a little longer time to bake. You'll have taller muffins if you bake them without liners. Use a soft, silicone spatula to get under the muffins and pop them loose. If you make banana muffins, use squishy ripe bananas and a teaspoon of banana flavoring.
The banana muffins shown here are topped with slices and then brushed with a melted butter and sugar mixture before baking.
