You've got to have potatoes and gravy! But do them ahead. That's one less thing to do on Thursday.

Peel your potatoes and immerse them in water. They'll keep for 24 hours in the fridge covered with water.

Then in the morning, stick them in the crock pot and forget them until just before dinner.

Don't fuss over the gravy either. You can fuss over separating the fat from the drippings or you can do what the restaurants do--make quick gravy from a bag.
