You can have a ton of fun with ice cream sandwiches.  It's easy to make them like those above. Simply smash ice cream between two cookies and put them in the freezer until the ice cream gets hard.

You can roll sugar cookie dough out in a baking sheet to make one big cookie, bake the big cookie on the baking sheet, and cut it into rectangles to make into ice cream sandwiches. 

Or you can grab a tool that works better than that.  It cuts your cookies to the right size and shape and it has an assembly that compresses your ice cream and cookies together for denser, neater sandwiches that are easier to eat.

There are lots of ways to decorate your cookies.  The ones above were dipped in chocolate and then sprinkled with crushed candy pieces.
