New York chef Peter Cooke finds niche in Lafayette food scene

Good morning, Acadiana Business newsletter readers. We've got headlines for you this morning.

When chef Peter Cooke moved to Lafayette from Brooklyn two years ago, he wasn't immediately planning on opening a restaurant. 

Then, opportunity came knocking in the form of a lease on a building that already had history as a beloved neighborhood eatery. His brother-in-law mentioned how the former Saint Street Inn was empty and he should check it out. 

Cooke says, "I went from Google mapping how to get here to signing a lease on a restaurant three weeks later."

That turned into Park Bistro, 407 Brook Ave.
