COOK THIS NOW When my colleague Emily Johnson wrote about this recipe from Sonoko Sakai’s Japanese Home Cooking, I’ll admit: I was influenced. I’d made okonomiyaki in the past, but never in the light of COOK90. I realized that okonomiyaki, a Japanese pancake filled with shredded vegetables and meat, was excellent fodder for nextovers (a major tenet of the COOK90 experience).
