Okonomiyaki

 
 

When my colleague Emily Johnson wrote about this recipe from Sonoko Sakai’s Japanese Home Cooking, I’ll admit: I was influenced. I’d made okonomiyaki in the past, but never in the light of COOK90. I realized that okonomiyaki, a Japanese pancake filled with shredded vegetables and meat, was excellent fodder for nextovers (a major tenet of the COOK90 experience). And since the name of the dish is derived from the Japanese word okonomi, meaning “as you like it,” any topping you like is fair game.

My suggestion: if you’ve never made okonomiyaki, follow Sakai’s method to the letter. Then switch it up. Would you like a thinner batter? Add more milk. Not into red pepper? Switch it out for shredded sweet potato. Reducing your meat intake? Me too! Leave it out. You know, as you like it.
