The rise of self-serve kiosks in restaurants has stirred controversy over whether the machines will replace human workers, but the machines are used mainly to take orders and can actually create more work for back-of-house employees, experts say. Some chains, such as Panera and Saladworks, are expecting labor hours to increase as a result of higher throughput enabled by kiosk technology.
