Cook them for two minutes in a cup in the microwave. Top them with butter and syrup, and eat them with a spoon.
And the secret is . . . a just-add-water pancake mix! One-third cup mix and 1/3-cup water. (I don't even bother measuring--just 50/50-ish.) Stir and stick it in the microwave for about two minutes.

I ate one in the truck on the way to town the other day. The cup kept it warm, and the butter melted. The syrup soaked into the muffin.

Talk about a quick, slick meal!

Mostly, I'm using our new Blueberry Corn Cakes Mix. But then, I'm infatuated with our corn cakes.
