Here’s today’s forecast: 🌥️ 17 – 27° in Logan | ❄️ 10% chance 🌨️ 26 – 33° in Salt Lake City | ❄️ 30% chance 🌤️ 26 – 43° in St. George One of my favorite cold weather snacks is cookies and milk (or if I’m feeling decadent, hot chocolate), so I thought I’d share one of my favorite cookies for our Wednesday recipe. Every year around Christmas, my family makes a German cookie called “butterbrot,” which literally means “bread and butter.” When they are finished, they look a little like tiny slices of bread with butter on them! One of the things I particularly love about this recipe is that it’s a tiny piece of history. We can date it back to my great-grandmother in very early 20th century Germany. Over the years, our family has updated the recipe — for example, we use almonds instead of hazelnuts. The original recipe called for raw egg yolks in the icing, which you cannot do with modern American eggs without risking a bit of food poisoning. Also, my great-grandmother never measured anything, so we have no idea if this is even “correct.” Overall, this recipe is a snapshot of the life of my ancestors caught in a tiny piece of amber — and it’s delicious too! ——— Butterbrot 1 1/2 cups sugar 1 1/2 cups butter 8 ounces grated German chocolate (my family uses Baker’s Chocolate) 2-4 cups finely chopped nuts (almonds, hazelnuts or pecans) 3 extra large eggs 1 1/4 teaspoons salt 5 cups flour Method: - Mix butter and sugar until fluffy. Add all ingredients except flour until thoroughly mixed. Add flour and mix by hand or with a stand mixer.
- Place on lightly floured surface and divide into thirds or fourths. Roll each section into a log. Wrap in wax paper or saran wrap and refrigerate overnight.
- Preheat oven to 350°. Slice dough into 1/4 inch discs. Place on an ungreased cookie sheet and bake for 10-15 minutes. Check around 8 minutes to make sure they don’t get burned!
- Make an icing with confectioner’s sugar, vanilla and milk. Place a dollop on the cooled cookies.
